Meet our Executive Head Chef Sue Leacy

Gaining her qualifications at Llandrillo College, Sue started her career as a Commis Chef, working up through the ranks to Head Chef at the Palace Hotel, before travelling to Australia, New Zealand and Asia experiencing their cultures and cuisines.  On returning to Britain Sue was appointed Head Chef at the newly opened Revolution in Manchester before taking up her Head Chef role at the Quay Hotel and Spa in April 2009.

Head Chef’s sometimes quirky, simplistic presentation of the food brings together classic combinations with truly magnificent local produce. There’s no pandering to clichéd  “Welsh” ideas, instead the Head Chef creates and promotes the highest standard and quality seasonal local fare, working closely with local suppliers to bring together the very best menu choice and dishes utilising the exceptional local larder of North Wales.
